Cupcakes are one of those perfect sweets that we all fall in love with. Who doesn't love a mini-personal-size cake? You can easily eat 2 or 3.... or more, and not feel as guilty as you would if you ate a slice of cake (or is it just me who doesn't feel that guilt?)... My easy and quick moist vanilla cupcake recipe is below.
Ingredients:
Vanilla Cupcakes:
1 1/3 cup all-purpose flour (spooned & leveled)
1 1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup whole milk
Vanilla Frosting:
1/2 cup unsalted butter, softened
1 cup confectioner's sugar
2 teaspoons vanilla extract
1 tablespoon whole milk
Method:
To make the vanilla cupcakes:
1. Preheat oven to 350*F. Line a 12-count muffin pan with cupcake liners. Set aside.
2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
3. In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Add in the sour cream and mix until fully combined.
4. Slowly add half of the dry ingredients to the wet ingredients and mix until just combined, then add the milk, mix together, and lastly add the rest of the dry ingredients - making sure not to over mix the batter.
5. Scoop the batter into the cupcake liners, filling them a little over half way full. You should have extra batter left to make more cupcakes with.
6. Bake for 20-22 minutes or until a wooden toothpick inserted into the center of the cupcake comes out clean.
7. Remove from the oven and allow to cool for a few minutes. Remove all of the cupcakes from the pan and transfer to a wire rack to cool completely.
To make the frosting:
1. In a medium bowl, beat the butter on medium speed until smooth and creamy.
2. Add in the confectioner's sugar and vanilla and mix on low until well combined. Add in the milk, increase the speed to medium-high, and mix for another 30 seconds to a minute, until the frosting is smooth. Frost the cooled cupcakes as desired.... AND we are done!
