Mini Berry Cheesecakes



Cheesecake is one of those desserts that if you mess the recipe up, you are screwed! This recipe is not only easy to make, it is also easy to eat! Make this recipe with your kids as it is fun to make and they'll be so proud of themselves too :)


Ingredients:

For the crust: Ingredients:

1 ¼ cups graham cracker crumbs

4 tbsp butter, melted


For the cream cheese batter:

10 oz or 1 ¼ packs cream cheese, room temp

½ cup sugar

1 tsp vanilla extract

2 eggs, room temp

1 ½ tbsp all-purpose flour

½ cup sour cream


Method:

1. Cream the sugar and cream cheese together until smooth. Add the vanilla extract, then mix.

2. Then add the eggs one at a time, and beat after each addition. Add the flour and then mix the batter again making sure there are no lumps.

3. Add the sour cream and mix one last time.

4. Using a cookie or ice cream scoop, scoop the batter into the prepared pans with the crust mix at the bottom.

5. Put these in the oven for 15-20 mins or until a toothpick or skewer inserted comes out clean.

6. Take them out of the oven when they are done, and then let them cool in the pan to come to room temp. After they come to room temp, put them in the oven overnight, to completely cool down.

7. Add your choice of toppings, berries, chocolate, caramel - whatever you like!

8. I made a mixed berries compote using mixed berries and sugar. Macerate them and then put in the fridge for an hour till the berries release their juices. Top it on the cheesecakes, and serve cold!
