Pineapple upside down cakes is one of those classic cakes that cannot go wrong at any occasion. Whether it be a family gathering, or the Holiday season, this cake is (almost) everyone's favorite. Recipe is below, and you can watch me make the cake step-by-step here.
Ingredients:
Pineapple Topping:
1/4 cup unsalted butter, melted
1/2 cup dark brown sugar (or light)
Pineapple slices, patted dry
Maraschino cherries (as much required depending on how big your pan is)
For the Cake:
1/2 cup unsalted butter, at room temperature
3/4 cup granulated sugar
2 eggs, room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
Pinch of salt
1/2 cup milk at room temperature
Method:
1. Preheat oven to 350F (175C)
2. Melt the butter in a 9" cake pan, covering the entire bottom of the pan with it.
3. Sprinkle the brown sugar evenly and mix with the butter. Make an even layer at the bottom of the cake pan. Place the patted dry pineapple slices over the bottom of the pan.
4. Place the maraschino cherries in the middle of the pineapple slices and around the pan to cover the voids. Set aside.
5. Sift together the flour, salt, and baking powder in a medium size bowl. Set aside.
6. In a large bowl, with a hand mixer, cream the granulated sugar and butter together for about 2 mins.
7. Add eggs one a time, and beat after each addition.
8. Add the vanilla extract and mix again.
9. Put half of the dry ingredients into the wet ingredients, and mix together well. Add in the milk, mix again, and then end with the dry ingredients and mix one last time. Do not over beat.
10. Pour the batter onto the prepared cake pan with the pineapple topping. Bake for 30-40 mins till a toothpick or skewer inserted into a cake comes out clean.
11. Remove from the oven and let the cake sit in the cake pan for at least 10 mins before removing from the pan.

Serve with whipped cream or your favorite vanilla ice cream. This cake is wonderful even warm or at room temperature!
