I have to admit, pumpkin is not my favorite flavor for Fall season. Maybe its the cinnamon that people add to pumpkin spice, and not the pumpkin. But I am not pumpkin flavor obsessed. That still doesn't make me stop from going in the kitchen and baking a quick dessert made with pumpkin, and my favorite thing of all time - chocolate! My easy recipe for pumpkin chocolate chip loaf cake is not only amazing, it is AMAZING! Recipe is below.
Ingredients:
1-¾ cups all purpose flour
2 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground ginger
If you want, you can substitute the cinnamon, nutmeg and ground ginger with pumpkin pie spice. Just use 2-½ tsp of that instead.
¾ tsp salt
2 large eggs (at room temperature)
¾ cup granulated sugar
½ cup packed dark brown sugar
1-½ cups pumpkin puree
½ cup canola oil
¼ cup orange juice (or you can use ¼ cup milk)
⅔ cups semi-sweet chocolate chips
Method:
1. Preheat oven to 350*F and grease a loaf pan. Set aside.
2. Sift all the dry ingredients together in a large bowl, except for the granulated and brown sugars.
3. In a medium bowl, mix the granulated sugar, dark brown sugar, eggs, pumpkin puree, oil, and orange juice all together.
4. Add these wet ingredients into the dry ingredients bowl, and mix very well, until there are no lumps in the batter.
5. Add the chocolate chips into the batter and fold gently.
6. Pour the batter into a greased loaf pan and top it with ¼ cup of chocolate chips.
7. Put it in the oven for about an hour - check on the cake periodically. Depending on your oven, the cake may be done before an hour. Insert a toothpick or skewer into the center of the cake and if it comes out dry, that means it's all done!
8. Serve the cake with whipped cream, or on its own with some coffee or tea. You’ll feel like you’re in an Autumn heaven as soon as you bite into this moist cake!
