One-pan Spicy Salmon, Roasted Potato Wedges, and Green Beans


I must admit, most days I don't want to be around the kitchen, although you already know I love to cook and feed people. Everyone has those days where all you want to do is order take-out, but that is never as satisfying as a homecooked meal. My easy, healthy and flavorful one-pan meal saves the day! Here is my spicy salmon chunks, seasoned potato wedges and some crunchy green beans. Recipe is below, but you can watch me cook this meal here.


Ingredients:

For the potatoes:

3 medium potatoes, cut into wedges

Salt and black pepper to taste

1 tsp dried thyme

1 tsp dried parsley

1 tsp onion powder

1tsp garlic powder

1 tbsp olive oil

Method:

Mix all of the above ingredients to season the potato wedges. Set aside and let's prep the green beans.


For the green beans:

1 bag green beans, washed properly

Salt and black pepper to taste

1/2 tsp garlic and onion powders

1/2 tsp olive oil

Method:

Mix all of the above ingredients to season the green beans. Toss really well. Set aside and let's prep the salmon.


For the salmon:

1 lb salmon filets, cut into bite sized chunks

Salt and black pepper to taste

1 tsp garlic and onion powders

1 tsp olive oil

Method:

Mix all of the above ingredients to season and marinate the salmon chunks. You can let marinate for an hour or go straight into the next step of baking.


For the sauce:

2 tbsp mayonnaise

Juice from half a lemon

Salt and black pepper to taste

1 tbsp sriracha (or your favorite hot sauce)

Method:

Mix all of the above ingredients to make the spicy sauce for the salmon. Set aside for at least 30 mins so the flavors can really get well incorporated with each other.


  1. Preheat oven to 350*F (or 180*C), line a baking tray with aluminum foil.

  2. Place the potatoes, green beans, and salmon (see video on how I did this) on the lined tray, then bake in the oven for 25 mins. After 25 mins the green beans and salmon will be done, but the potatoes will need another 15-20 mins.

  3. Remove the salmon and throw it into the spicy sauce. Toss it really well but gently coating the salmon with the sauce.

  4. After the potatoes have been in the oven for about 35-40 mins, remove from the baking tray.

  5. Serve the potatoes, salmon and green beans for an easy lunch, or healthy dinner option. This has to be one of my favorite meals I make. Not because of how easy it is, but also how much flavor notes it carries.
