The Best Potato Salad


Besides French fries, potato salad is my favorite potato dish. In the summer, it pairs perfectly with BBQ food, and in the winter, well it still is great with everything (or on its own). My potato salad recipe is not only easy (as usual) but it holds its own on the dinner table. Try my recipe below.


Ingredients:


3 medium sized potatoes, peeled, cut into chunks, then boiled till tender

2 eggs, hard boiled, chopped

1 cup frozen corn, peas and carrots, boiled and cooked

1 to 1 ½ cup mayonnaise

1 tsp mustard

1 tsp sweet relish

½ tsp black pepper

Salt to taste

½ tsp onion powder

1 tsp garlic powder


Method:

1. Boil the potatoes and vegetables together. Drain and cool in the same pot till they come to room temp.

2. Boil the eggs till hard boiled, cut into chunks. You can remove the egg yolk if you want. 3. 3. For the dressing, combine all the ingredients besides the eggs, potatoes, and vegetables in a large bowl.

4. Once the potatoes & veggies have cooled off, add all the ingredients together and mix till the dressing coats everything.

5. Serve cold with your favorite meal.
