Cornbread is such a classic side dish that really goes with any type of cuisine. The soft, sweet and savory flavors pair well with some of our favorite dishes. My recipe is not only done in a few minutes, eat also disappears in seconds too. I serve mine with a sweet honey butter, because honey and corn muffins are a match made in food heaven :) Recipe is below.
Ingredients:
Muffins:
1 cup cornmeal
1 cup flour
1/3 cup granulated sugar
1/2 tsp salt
4 tsp baking powder
1 egg
1 cup milk (I used evaporated milk)
1/4 cup canola oil (corn or vegetable oils are fine too)
Honey Butter:
4 tbsp softened butter
1 tbsp honey pinch of salt
Combine all ingredients to make the honey butter
Method:
1. Preheat oven to 400 degrees.
2. Add cornmeal, flour, sugar, salt, and baking powder to a large bowl and whisk to break up any clumps.
3. Combine egg, milk, and oil in a medium bowl and whisk to combine.
4. Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
5. Pour batter into a greased muffin tin, filling each cup about halfway. Bake for 13-15 minutes or until toothpick inserted in the center comes out clean. Don't overbake!
6. Combine honey butter ingredients listed above.
7. Serve the warm muffins with the honey butter!
