If you're from New York, or have ever visited, you know all about the halal cart at every other block. Whether it's in the summer heat, or a cold winter day, the halal cart's chicken and rice is popular any time of the year! My favorite is the combo platter which includes chicken, lamb "mystery meat", turmeric and cumin flavored rice, with a hefty drizzle of white sauce, the extra spicy hot sauce, and a dash of sweet BBQ sauce. How do you like your platter?
Ingredients:
For the chicken:
Boneless skinless chicken thighs 2 tbsp
Lemon juice 1 tbsp
Oil
1 tsp each: cumin powder, coriander powder, black pepper, salt, dried oregano
½ tsp of turmeric.
3 garlic cloves, chopped
Onion and green peppers, sliced
For the white sauce:
½ cup Yogurt
½ cup Mayonnaise
¼ tsp each Dried parsley, black pepper, salt, garlic powder
Lemon juice
For the rice:
1.5 cups basmati rice
½ tsp turmeric, and ½ tsp cumin seeds or powder
1 cup chicken stock
2 cups water

1. Mix all of the above ingredients underneath chicken ingredients, except for the onion and peppers for the marinade, let the chicken marinate for 4 hours or overnight. Cook the chicken with onions and peppers. See video link on how I cooked the chicken.
2. Mix all of the above ingredients underneath white sauce to make the sauce. Let it sit in the fridge for a few hours.
3. In a pot, add oil, and toast the cumin seeds and turmeric together. Don't burn the seeds. Add the chicken stock and water and let it come to a boil. Add salt to taste. Then add the washed rice. Let the liquids come to a boil, then cover and cook on low till the rice is done. Mix gently.
4. Serve the chicken and rice together, and top it with the white sauce we made, and also some hot sauce of your choice. Serve it with a side salad as they do in the streets of NYC!
